Marble Vanilla Cocoa Cookies

Jump to Recipe

Just a month and it’s here. If you’re already looking for new recipes for Christmas, a recipe for cookies might come in handy. After all, there’s never enough cookies for Christmas and you can make them ahead of time. These Marble Vanilla Cocoa Cookies are simple, easy to make, with a small amount of ingredients, and the immortal combination of vanilla and cocoa can’t be missed at Christmas. These are not bland ‘ordinary’ cookies, as you can really taste both flavors thanks to the great amount of cocoa and vanilla paste. Their unconventional marble look is simple yet interesting at the same time. The cookies are crunchy and they melt on the tongue when you bite into them at the same time. I opted for smaller cookies, about 5 millimeters in size, just right for one or two bites, but feel free to make them bigger. They’ll definitely look great on the Christmas table or just like normal cookies throughout the year.

Crispy vanilla and cocoa cookies with a marble pattern
Servings: 150 cookies
Ingredients
  • 150 g caster sugar
  • 300 g all purpose flour
  • 200 g butter
  • 2 egg yolks
  • 4 tablespoon cocoa
  • 1 tablespoon vanilla paste
Instructions
  1. Mix sugar with flour and butter.
  2. Add egg yolks and create the dough.
  3. Divide the dough into two parts.
  4. Add the cocoa to the first part, process the dough. Add the vanilla paste to the second part, process the other dough.
  5. Take half of the cocoa dough, take half of the vanilla dough and mix both doughs by hand into a large ball to create a marble effect.
  6. Shape the two-colored dough into two rolls about 5 cm in diameter.
  7. Do the same with the remaining halves of cocoa and vanilla dough.
  8. Wrap the four rolls in plastic wrap and refrigerate for two hours.
  9. After two hours, remove the rolls from a fridge. Slice the rolls into circles about 5 millimeters thick. Continue like this until there are no rolls left.
  10. Place the circles on a baking sheet and bake at 150 degrees for about 10 minutes.
Recipe Notes
  • Recipe adapted from Petits Gateaux book

Vanilková pasta je podobná ako vanilkový extrakt, len je hustejšia a je v nej vyššia koncetrácia vanilky. Dá sa zohnať v pekárenských obchodoch (ja ju mám z Matteo Cucina :))
