Chocolate cookies stuffed with salted caramel

 I think I have a new obsession and that is salted caramel. Personally, I like it even more than traditional caramel. After all, ¾ tsp of salt isn´t that much. Stay tuned for next week, when I will post a bit more traditional (Christmas) recipe with salted caramel. These cookies have a great combination of bitter cocoa, sweet chocolate and caramel, so they are not excessively sweet. You can prepare them for any occasion, also for Christmas. They´re a bit untraditional, but it doesn´t change the fact that they´re so tasty.

Crispy chocolate cookies stuffed with salted caramel
Servings: 27 cookies
  • Dough:
  • 220 g butter
  • 300 g granulated sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 500 g all-purpose flour
  • 100 g cocoa
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 250 g dark chocolate
  • Caramel:
  • 200 g granulated sugar
  • 90 g butter cut into cubes
  • 120 ml whipping cream
  • ¾ tsp salt
  1. Melt butter in the microwave oven. Add sugar, eggs and vanilla extract.
  2. In the second bowl, mix flour, cocoa, baking powder and salt. Add the flour mixture to the liquid mixture.
  3. Process the dough and add chopped pieces of chocolate. Process it again and put it on half an hour in the cold.
  4. After half an hour, take small pieces from the dough and form them into balls. Using a finger or round whisk, make an indentation in the centre of the ball and pour caramel into it. Caramel is best when it´s done in the same day. Take small amount of the dough and form it into flat dough. Put the flat dough on the top of cookie and seal the edges. See pictures.
  5. Continue, until there is no dough left.
  6. Bake 15 minutes on about 180 degrees. Warm cookies are the best.
  7. Salted Caramel: Heat sugar on medium heat when stirring constantly. When it is completely melted, lower the heat and add butter. Stir immediately. Be careful not to burn yourself. When the butter is completely melted, add the whipping cream. Stir immediately. Be careful not to burn yourself – there will be a lot of steam. Cook and stir constantly until it begins to bubble, then switch off immediately. Then add salt and let it cool a bit.
