Oreo red velvet bars

 I´m sure you´ve heard about red velvet cake. Red batter, thanks to reaction of vinegar and baking soda (although you can´t avoid red food coloring), with cream cheese icing is unmistakable dessert for sure. I baked it in a small baking pan – 33,5, but part of the batter run out, so definitely don´t try it and use bigger baking pan. Whatever, it won´t always work as imagined, but it is tasty and if you put it in bigger baking pan, it won´t even run out 😀

Traditional red velvet bars with cream cheese icing and crushed oreos
Servings: 15
Ingredients
  • Cake:
  • 375 g cake flour
  • 23 g unroasted/raw cocoa
  • ¾ tsp salt
  • 170 g butter at room temperature
  • 450 g sugar
  • 4 eggs
  • 1 ½ tsp vanilla extract
  • 360 ml buttermilk
  • Red food coloring (I used about 7 x tip of knife of food coloring)
  • 1 1/2 tsp vinegar
  • 1 1/2 tsp baking soda
  • Icing:
  • 600 g cream cheese
  • 150 g icing sugar
  • 2 tsp vanilla extract
  • 400 ml whipping cream
  • Oreo (20-25 cookies)
Instructions
  1. Sift flour with cocoa and salt.
  2. In the second bowl, beat together butter and sugar. Add eggs, one at a time, then vanilla extract and beat again.
  3. Whisk buttermilk with food coloring.
  4. Using a mixer on low speed, incorporate the half of flour mixture into the butter mixture.
  5. Then incorporate the half of buttermilk as well. Beat the mixture and repeat – incorporate the second half of flour mixture, beat it, and add the second half of buttermilk.
  6. In a cup, combine vinegar and baking soda. Immediately when it starts to fizz, fold it into the batter.
  7. Beat the batter.
  8. Pour the batter in baking pan, which is covered with baking paper and bake for about 35 minutes on 190 degrees or until the inserted toothpick will come out clean.
  9. Icing:
  10. Beat cream cheese with sugar. Add vanilla extract.
  11. In the second bowl, whip whipping cream and then add it into cream cheese.
  12. Spread the icing over chilled batter.
  13. Top the cake with crushed oreos.
Recipe Notes

I used 33.5 cm baking pan, but it was definitely too small, use 44 x 32,5 cm
