Blueberry lemon donuts

New subcategory within American cuisine, donuts, starts by this recipe for blueberry lemon donuts. Many of you know donuts thanks to The Simpsons and Homer. You can encounter with many variations, baked and fried ones. I´m not very keen on fried donuts, I think they are too greasy, but the baked ones, oh yeah, give me some. I have this baking mold from one unnamed Chinese online shop and if you have heard about this shop, you know that you often will not get what you have ordered. Same happened with this baking mold, so instead of baking mold for 6 big donuts I ended up with a baking mold for 8 small, mini donuts. Well, never mind, it doesn´t change their taste anyway.

 

Specifically these donuts are a great way how to use fresh blueberries. With a bit of lemon, they create a great combination, which even fruit haters will love. Donuts are moist and fluffy thanks to buttermilk, so you don´t even need yeast. They´re not too sweet neither. This is recipe for 80 mini donuts, so if you have large baking mold, you will get about 40 pieces. You can lower the amount of ingredients, I needed many pieces since I was going to festival and I needed something for breakfast as well as something sweet. You can decorate them with icing, for example icing sugar mixed with smashed blueberries, add a bit of water, but as I said, I needed them to survive this scorching hot weather, so no icing for me.

Summer moist baked no yeast donuts with lemon and blueberries
Servings: 80 mini donuts
Ingredients
  • 770 g all purpose flour
  • 360 g sugar
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • Zest of 1 ½ lemon
  • 250 g butter
  • 500 ml buttermilk
  • 6 eggs
  • 3 tsp vanilla extract
  • Juice of ½ lemon
  • 400 g blueberries
Instructions
  1. Whisk together flour, sugar, baking powder, baking soda, cinnamon and lemon zest.
  2. Melt butter on medium heat while stirring all the time.
  3. In the next bowl, whisk together melted butter, buttermilk, eggs, vanilla extract and lemon juice.
  4. Pour butter mixture into flour mixture and stir well.
  5. Incorporate blueberries into mixture and fold in carefully.
  6. Put batter into piping bag with big hole. Pipe batter into greased baking donut mold (I used the silicone one). Grease baking mold before every bake.
  7. Bake on 180 degrees for 10 minutes. Let it cool for a few minutes after taking out of oven, then take donuts out of baking mold and let them cool completely.
