Strawberry-banana bread

Strawberries are a symbol of summer for me and although I don´t grow them at home, the few pieces are worth to buy (at least for a cake :D). I wanted something that would last a long journey in train, so a creamy cake was out of option. After all, a strawberry-banana bread came out as a winner of this battle. Although in train, I had to have tissues by my side all the time, it was worth the taste. Strawberry banana bread

Strawberry-banana bread
Recipe (baking pan – 30 cm)
115 g butter
150 g sugar
2 large eggs
80 g Greek yogurt
4 large bananas
1 teaspoon vanilla extract
250 g all-purpose flour
1 teaspoon baking soda
Pinch of salt
½ teaspoon of cinnamon
140 g cut chocolate
150 g cut strawberries
Directions:
1. Smash bananas using a fork or a stick mixer. Toss strawberries in all-purpose flour.
2. Mix together butter and sugar. Progressively add eggs. Beat and progressively add yogurt, smashed bananas and vanilla extract. Beat everything together.
3. In the second bowl, mix together flour, baking soda, salt and cinnamon.
4. Mix the flour mixture into wet mixture.
5. Fold chocolate and strawberries using spatula.
6. Spoon the batter into baking pan which is greased with butter. Cover the baking pan with parchment paper and bake for 50 – 60 minutes on 190 – 200 degrees.
