I continue in the trend of “small” cakes with this dessert. Pear Cream Cheese Cake Bars are kind of a canapé, as you probably eat these nine pieces right away. They are special by adding cream cheese into batter, so batter is soft and creamy. Not soft like a sponge cake, with its density, it resembles more to a brownie, but thanks to cream cheese it is very soft. In addition to pears, the taste is created with lemon – juice and peel – and of course cinnamon. After all, cinnamon and pears are an inseparable fall combination. Pears also go well with soft creamy taste of the cake, so there is a risk that nine pieces will not be enough and you will have to make a double batch.

Creamy cake bars with cream cheese and pears cubes in batter
Servings: 9 pieces
Ingredients
- 3 large pears
- 2 tbsp crystal sugar
- Half of lemon (zest+ juice)
- 1 tsp cinnamon
- 125 g butter
- 130 g icing sugar
- 4 eggs
- 250 g cream cheese
- 50 g all-purpose flour
- 1 pack of baking powder (12 g)
Instructions

Peel pears, remove the seeds, and cut pears into cubes.

Mix them with crystal sugar, lemon juice and cinnamon.

In the second bowl, whisk butter together with sugar and egg yolks until fluffy.

Add cream cheese, lemon zest and flour mixed with baking powder, stir well.

In another bowl, using the mixer, beat egg whites until fluffy and not liquid.

Incorporate the firm egg white mixture and gently fold it in batter using a spatula.

Pour the batter in a baking pan covered with baking paper and gently press down pears on the top of batter.

Bake for about 40 minutes at 170 degrees or until the toothpick comes out clean.
