I passed my last state exam so I have a master’s degree. I finally have some time to bake, which really pleases me. The only thing left to do is to find a good job, easy-peasy right? 😀 Since strawberry season is on, I told myself that Ombré Strawberry Yogurt Panna Cotta would be the right refreshment for this hot weather. Traditional yogurt panna cotta is perfect for summer. Mine is a bit runnier, but since it is in cups, it won´t hurt. I think this runny one is much better than the one where all you can taste is gelatin. You will use strawberries for second and third layer, specifically strawberries for strawberry panna cotta and for the third layer of strawberry jelly. These layers are firmer than the white yogurt layer. Strawberry panna cotta has a soft creamy taste, just like the traditional one, but you can still taste a pleasant strawberry taste. You can enjoy a bold strawberry taste, with no additions, in strawberry jelly. It is a perfect refreshing summer dessert, which looks just great.

- 200 ml heavy cream
- 50 g crystal sugar
- 1 tbsp vanilla extract
- 120 g plain yogurt
- 3 tbsp water
- 1 tsp gelatin powder
- Strawberry layer:
- 120 ml heavy cream
- 50 g crystal sugar
- 120 g fresh strawberries
- 3 tbsp water
- 1 ½ tsp gelatin powder
- Strawberry jelly:
- 200 g fresh strawberries
- 2 tbsp crystal sugar
- 1 ½ tsp gelatin powder
- 2 tbsp water

White layer:

Put heavy cream and sugar in a saucepan on medium heat. Heat it until it starts to simmer.

When it starts to simmer, set it aside immediately and add vanilla extract and plain yogurt.

Prepare gelatin according to directions – mix gelatin powder with 3 tablespoons of water. Heat it, until the gelatin melts down, then incorporate a few tablespoons of mixture. Pour the gelatin into the rest of mixture. Stir well.

Pour panna cotta into cups and let it cool to a room temperature. Then, move them to a refrigerator and let them there for about 3 – 4 hours.

Strawberry layer:

Put heavy cream and sugar in a saucepan on medium heat. Heat it until it starts to simmer.

When it starts to simmer, set it aside immediately and add strawberries mixed into puree.

Prepare gelatin according to directions – mix gelatin powder with 3 tablespoons of water. Heat it, until the gelatin melts down, then incorporate a few tablespoons of mixture. Pour the gelatin into the rest of mixture. Stir well.

Pour strawberry panna cotta on the white panna cotta layer and let it cool to a room temperature. Then, move them to a refrigerator and let them there for about 1 – 2 hours.

Strawberry jelly:

Mix strawberries into puree, combine them with sugar.

Heat it on medium heat, until they are not too hot.

Prepare gelatin according to directions – mix gelatin powder with 2 tablespoons of water.

Heat it, until the gelatin melts down, then incorporate a few tablespoons of mixture. Pour the gelatin into the rest of mixture. Stir well.

Pour strawberry jelly on the strawberry panna cotta layer and let it cool to a room temperature. Then, move them to a refrigerator and let them there for at least 3 hours, preferably overnight.

It can be decorated with fresh strawberries and mint.
