The plum season is slowly coming to an end, but you still have some time to make a cake. After plum jam and plum chutney, I finally got to a cake. As you probably know, me and sour dough don’t really go together, so every year I think of a new plum cake that isn’t just a traditional sourdough plum cake. Since plums and poppy seeds are such a tasty combination, I decided to make Plum Poppy Seed Loaf Cake with Crumble.
The loaf cake is a variation of an already tried and tested “classic” vanilla loaf cake recipe, with the addition of unground poppy seeds. The cake is fluffy, light, but dense enough to keep the plums and crumble from sinking in. There’s not a lot of poppy seeds in the batter, I’d say just enough to give the cake with a poppy seed flavor, so the loaf cake will be liked by those who don’t like a lot of poppy seeds as well. There are fresh halved plums prinkled over the batter; they let their juice out nicely and they soften as they bake. On top of the plums goes my classic crumble, made with flour, butter, almonds and cinnamon, which gives the loaf cake just the right crunch and a subtle almond undertone. Soft poppy seed loaf cake, juicy plums and crunchy almond crumble, and a quick all cake is made.
- Loaf Cake:
- 3 eggs
- 120 g crystal sugar
- 200 g plain yoghurt
- 115 g butter
- 1 ½ teaspoon vanilla extract
- 300 g all-purpose flour
- 20 g unground poppy seed
- 1 packet of baking powder (12 g)
- 600 g washed and pitted plums
- Crumble:
- 50 g brown sugar
- 30 g all-purpose flour
- 20 g crushed almond flakes
- 1/3 teaspoon cinnamon
- 25 g cold butter

Loaf Cake:

Beat eggs with sugar.

Add yogurt, mix well.

Melt butter and incorporate into batter. Add vanilla extract, stir well.

In another bowl, mix flour with poppy seeds and baking powder.

Incorporate the flour mixture into the egg mixture and stir to combine.

Pour batter into a baking pan covered with baking paper.

Put plums, which have been cut in half, on top of the cake. Sprinkle crumble over the plums.

Crumble:

Combine brown sugar with flour, almond flakes, cinnamon and butter cut into cubes. Process ingredients by hands so they are combined but they still crumble. Sprinkle crumble over plums.

Bake at 180 degrees for about 60 minutes or until a toothpick inserted comes out clean.
