Moist coconut muffins with banana and dark chocolate
Servings: 30 muffins
Ingredients
- 300 g butter
- 2 eggs
- 220 g sugar
- 2 tsp vanilla extract
- 250 g plain yogurt
- 4 bananas
- 320 g all purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 150 g shredded unsweetened coconut (+ to sprinkle)
- 150 g dark chocolate

Beat butter with sugar and eggs using an electric mixer. Add vanilla extract, yogurt and smashed bananas. Beat again.

Mix flour with baking powder and salt.

Incorporate flour mixture to butter mixture and mix it. Add shredded coconut and chopped chocolate.

Fill 2/3 of muffin cup with batter. Sprinkle each muffin with shredded coconut.

Bake for 30 – 35 minutes on 180 degrees and cover it with baking paper during baking.
