Halloween Frankenstein Tartelettes

Halloween is coming and although I don´t celebrate it, I never refuse an occasion to make some funny dessert. Halloween Frankenstein Tartelettes look funny, they are easy to make and if you don´t want to, you don´t even have to use food coloring. Pistachio custard itself has a green color, so tartelettes will have a slight green color way one or another. Filling is made with already mentioned pistachio powder custard, sour cream and a bit of butter, which you won´t even notice. Eyes and hair are made with chocolate ganache, since I like it better than just a regular chocolate. These tartelettes are perfect for some Halloween party.

Green Frankenstein tartelettes for Halloween, made with pistachio custard
Servings: 7
Ingredients
  • Dough:
  • 250 g all-purpose flour
  • 125 g butter
  • 75 g icing sugar
  • 1 egg
  • A pinch of salt
  • 30 ml cold water
  • Filling:
  • 2 packets of powder pistachio custards (2 x 40 g)
  • 400 ml milk
  • 50 g butter
  • 6 tbsp icing sugar
  • 200 g sour cream
  • Green food coloring (optional)
  • Decoration:
  • 70 g dark chocolate
  • 70 g whipping cream
  • 7 pairs of chocolate eyes
Instructions
  1. Dough:
  2. Mix and combine flour with butter, icing sugar, egg, water and salt. Process it using hands or mixer. Put the dough in a refrigerator for about an hour.
  3. Take the dough out after an hour, roll it out on a floured work surface and put it on greased tartlet baking pans. Cut off the remaining dough around the edge of the baking pans. Cover dough with baking paper and weigh it down with, for example, legume.
  4. Bake for 20 – 25 minutes on 180 degrees or until edges begin to brown. Take them out from the oven, remove the baking paper and legume.
  5. Let it cool and fill with filling.
  6. Filling:
  7. Cook custards in milk.
  8. Cover a pot with plastic wrap.
  9. Incorporate butter into lukewarm mixture, then icing sugar, sour cream and a bit of food coloring.
  10. Divide filling evenly into all tartelette crusts and smooth it out.
  11. Decoration:
  12. Put eyes in the center of the upper half of a tartelette.
  13. Heat whipping cream and bring it to boil.
  14. When it starts to boil set it aside and add chopped chocolate.
  15. Stir well, until you get a consistent mass.
  16. Let it cool a bit, to a room temperature, and fill a piping bag with a small hole with it. Create hair and mouth with this piping bag.
Recipe Notes
  • Eyes can be made at home, from white and dark chocolate -
  •  Melt dark chocolate in water bath and put it in a piping bag. Make a small hole on the end of piping bag. Using the piping bag, create small dots on baking paper. Let them dry and get firm.
  • Melt white chocolate in water bath and put it in a piping bag. Make a small hole on the end of piping bag. Using the piping bag, create big dots on baking paper. Press down dark dots into white ones before the white ones get firm. Let them dry and get firm. They can be stored in a freezer.
