So December is here. The frequency of the question “have you bought everything for Christmas yet?” is rapidly increasing. And no, I haven´t, honestly, I wouldn´t even realize that some Christmas is coming if it wasn´t for all these Christmas themes everywhere. At first, I have to fight through all tests, seminar works and everything similar to these, so I will start to realize that there is some Christmas probably one week before it. What a lovely idea. But these cookie sandwiches improved my mood even in this crazy time. I think it wasn´t only my case, but also the case of everyone else I offered these cookies to, because everyone loved them. These Double Chocolate Cookie Sandwiches with Ganache are great for Christmas, but also just like that, during any time in year. Cocoa cookies are, thanks to baking powder, soft, they melt on your tongue, even in your hands. They are joined together by taste chocolate ganache filling, thanks to which they taste like a real chocolate bomb. I made lots of these cookies, the amount suitable for Christmas, but if you lower the dose, the preparation won´t take so much time. I guarantee that everyone will love them.
- 640 g butter
- 660 g sugar
- 100 ml oil
- 4 eggs
- 2 tbsp vanilla extract
- 920 g all purpose flour
- 160 g cocoa
- 4 tsp baking powder
- Filling:
- 480 g dark chocolate
- 300 ml whipping cream
- 120 g butter

Beat butter with sugar until creamy.

Add oil and beat again.

Add eggs and vanilla extract and beat again.

In the second bowl, mix together flour with cocoa and baking powder.

Incorporate flour mixture into butter mixture and knead until ingredients combiner together.

Create dough.

Wrap dough in plastic wrap and put it in some cold place for at least 1 hour.

After 1 hour, take dough out, take small pieces from it and create small balls from these pieces. Put these small balls in a baking pan covered with baking paper and press them down using a glass or a meat beater.

Bake on 180 degrees for 7 – 10 minutes. Let them cool and fill them with ganache.

Ganache:

Melt chocolate in water bath.

Incorporate whipping cream and then butter into melted chocolate.

Let it cool a bit, until chocolate is a bit firm.

Fill ganache in a piping bag. Put ganache in one cookie, cover and gently squeeze it with the second cookie.
Dip a meat beater or a glass in flour or cocoa so cookies don´t stick to a beater or to a glass
