At this time of the year, there are probably two types of people – those who still have some sweets left from the holidays and those who are already baking again. If you belong to the second group and you are looking for an inspiration, what about Chocolate Mascarpone Hazelnut Cake. The cake is very creamy thanks to mascarpone, full of chocolate and hazelnuts. It is a slightly unconventional cake because you do not use mascarpone in filling but in batter. Batter has the consistency of denser “filling”. It may come in handy when you have some leftover mascarpone in the fridge and you don’t want to make a time-consuming cake with filling. This cake is ready in a minute, it contains a lot of chocolate and, in addition, who could resist the combination of chocolate and hazelnuts.
- 200 g dark chocolate
- 200 g mascarpone
- 80 g crystal sugar
- 4 eggs
- 40 g cornstarch
- 120 g hazelnuts

Melt chocolate in water bath.

Set aside, add mascarpone, stir well.

Add sugar, stir, then add eggs and stir again.

Add cornstarch gradually and stir well to create homogenous mixture.

Add hazelnuts, which are slightly crushed, but still quite large. Stir well.

Pour batter into a baking pan covered with baking paper.

Bake at 180 degrees for about 30 minutes or until the toothpick inserted comes out dry.
