Yes, again the combination of chocolate and mint. Whatever, I just love it. Moreover, this icing doesn´t contain any butter, which is a common problem of cupcake icings. It consists only of curd cheese and pudding.
Recipe (15 pieces)
For cupcakes:
175 g sugar
175 g all-purpose flour
½ tbsp baking soda
2 tbsp cocoa
½ tbsp grated chocolate
250 ml kefir
2 tbsp cocoa (for kefir)
1 tbsp grated chocolate (for kefir)
3 tbsp icing sugar
40 ml oil
2 eggs
For icing:
500 ml milk
2 puddings chocolate-mint (Dr. Oetker)
250 g soft curd cheese (or cream cheese)
4 tbsp mint syrup
3 tbsp icing sugar
Directions:
1. Mix sugar, flour, baking soda, cocoa and grated chocolate together.
2. In the second bowl, mix kefir, cocoa, grated chocolate, icing sugar, oil and eggs.
3. Incorporate the flour mixture to the wet mixture. Pour about 2 tbsp of batter to cupcake cups.
4. Bake on 200 degrees for 20 minutes. Cover them with baking paper after 10 minutes in the oven.
5. Prepare the icing in the following way: cook puddings from milk and puddings. Let it cool. Meanwhile, mix the curd cheese with syrup and sugar. Mix the cooled pudding using a mixer and add it gradually to the curd cheese. Decorate the cooled cupcakes using icing bag.
