Cold mornings suggest that whether we want or not, fall is almost here. Then, there are also apples falling from the trees daily so I turned them into Flourless Chocolate Apple Cake. It’s a simple cake with dark chocolate in batter, hazelnuts instead of flour and a few apples on top. Only nine pieces are cut from this cake, so it’s great if you want something sweet, but you know that larger batch wouldn´t be eaten. As the cake does not contain flour, it is very soft. It tastes like brownies, but it is not as dense. Besides chocolate and apples, thanks to the addition of hazelnuts, it gained yet another taste. I sprinkled the apples with sugar and cinnamon before baking, as they weren´t very sweet and, after all, cinnamon goes well with apples.

- 100 g dark chocolate
- 3 eggs
- 100 g crystal sugar
- 150 g finely chopped hazelnuts
- 3 - 4 apples

Melt butter with chocolate. Stir and let it cool to room temperature.

Whisk yolks with sugar until fluffy.

In the next bowl, using the mixer, beat egg whites until fluffy and not liquid.

Add hazelnuts and the chocolate mixture into the yolk mixture, stir.

Incorporate the firm egg white mixture and gently fold it in batter using a spatula.

Pour the batter in a baking pan covered with baking paper.

Wash and clean apples, cut them into quarters and then into slices.

Place sliced apples on batter, sprinkle them with sugar and cinnamon.

Bake at 180 degrees for about 35 minutes.
