Lemon Poppy Seed Bundt Cake

Bundt cakes are one of the quickest desserts. You throw everything in a bowl and you´re done. My oven doesn´t obey me lately, some parts of a cake are still raw, while others are too much baked. I usually have this problem with breads and bundt cakes, but I told myself that it was about the time that I made some bundt cake, since I have only one on the blog. Moreover, it´s a great dessert when you know that you need something small, only for a few people. So I decided to make Lemon Poppy Seed Bundt Cake. Although I´m more an orange person, not the lemon one, once in a while I need a change. And lemon with poppy seeds creates subtle, extraordinary and very delicious combination. The bundt cake is smooth, the taste of lemon and poppy seeds is not too bold, it is just the way it should be. Batter untraditionally contains only milk, not buttermilk, so you can make this bundt cake right away, no need to go shopping. When it comes to frosting, I decided to make traditional lemon frosting with icing sugar.

Lemon Poppy Seed Bundt Cake

Simple bundt cake with lemon zest, poppy seed and lemon frosting
Servings: 12 pieces
Ingredients
  • 240 g butter
  • 300 g sugar
  • 4 eggs
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 320 g all purpose flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 50 g poppy seed
  • 310 ml full fat milk
  • Frosting:
  • 200 g icing sugar
  • 4 tbsp lemon juice
  • 10 ml water
Instructions
  1. Beat butter until fluffy.
  2. Add sugar and beat again.
  3. Gradually add eggs, 1 by 1, beat after every egg.
  4. Add grated lemon zest and vanilla extract, beat again.
  5. In the second bowl, mix flour with baking powder, salt and poppy seeds.
  6. Add 1/3 of flour mixture into butter mixture, mix it, then add 1/3 of milk and mix it again. Repeat these steps until there is no flour mixture nor milk left.
  7. Pour batter into greased bundt baking pan.
  8. Bake 40 – 50 minutes on 180 degrees or until the inserted toothpick will come out clean.
  9. Let the bundt cake cool after taking out from the oven. Turn the bundt cake upside down and remove baking pan.
  10. Decorate the cooled bundt cake with frosting.
  11. Frosting:
  12. Mix icing sugar with lemon juice and water.
  13. Heat the mixture until sugar melts down and you get runny frosting.
  14. Decorate the bundt cake with frosting.
