If Christmas, then coconut. The time until Christmas is growing shorter, even radios talk only about Christmas and they are playing Christmas carols all the time. Don´t get me wrong, I like Christmas, but if I should listen to them 2 weeks before it, I would just end up fed up with them. What´s a lot is a lot. I believe that you have already baked all the cookies and the only desserts left are the creamy ones and sweets which need to be eaten quickly. These Coconut Raffaello Truffles are just the right dessert, which needs to be present on every Christmas table, simple tasty coconut no bake dessert, just for few bites. You won´t even need sweetened condensed milk for it, only the powdered one. Although these truffles don´t include wafer, like the true Raffaello, an almond inside and coconut make them really similar to Raffaello. If you don´t already make them for Christmas, I´m sure they will find their place on your Christmas table.
- 250 g butter
- 100 ml milk
- ½ tsp vanilla extract
- 250 g icing sugar
- 250 g powdered milk
- 150 g shredded unsweetened coconut
- shredded unsweetened coconut
- 45 almonds

How to remove almond skin:

Put almonds in water. Boil water, let it boil for a short time and put it aside. Immediately pour out hot water and pour in cold water. Let almonds in cold water for a few minutes. Take them out, dry them and remove their skin.

Truffles:

Melt butter in a water bath.

When it is melted, add vanilla extract and milk while stirring constantly.

Then add sugar, powdered milk and coconut. Create thick mass.

Put mass in a refrigerator for few hours, preferably over night.

After this time, take it out and let it rest for a few minutes at room temperature.

Take small parts from mass and put an almond inside it.

Form small balls and roll them in coconut.

Let balls get firm for a few hours.
