Once in a blue moon, I am in mood for something healthy. After all these sweet desserts I thought that I was about time to make something healthier. I didn´t want to exaggerate it so old-fashioned oats were enough for me, I consider them to be quite healthy. In order to spice up these Banana Oat Chai Spiced Muffins a bit, I added chai spice (or chai tea if you like). I bet many of you know it thanks to chai latte, of which I am a big fan. This spice gives a specific spicy-cinnamon flavor to muffins. But it is okay if you do not have this spice at home, you can leave it out since the recipe also contains cinnamon one way or another. Muffins are really moist, they can be separated from a muffin cup very easily, fluffy and the combination of banana, oats and chai tea makes them a really delicious breakfast or just a healthy snack.
- 75 ml hot water
- 3 bags of chai tea
- 200 g butter
- 200 g brown sugar
- 4 bananas
- 260 g all purpose flour
- 2 tsp baking powder
- 2 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 3 tbsp plain yogurt
- 220 g old-fashioned oats

Boil water and pour it in a glass with chai bags. Let them brew for about 10 minutes.

In the bowl, beat butter with sugar until fluffy. Add smashed bananas.

Add flour mixed with baking powder, baking soda, salt and cinnamon.

Mix well.

Add vanilla extract and yogurt, mix it.

Discard chai tea bags and incorporate brewed tea into batter.

Add oats, mix well.

Fill more than 2/3 of a muffin cup with batter. Sprinkle every muffin with oats.

Bake on 180 degrees for 20 – 25 minutes.
