Summer temperatures are extremely high so ice cream is a must-have. I made not just a simple one, but Waffle Ice Cream Sandwich with Homemade Raspberry Ice Cream. Something similar to Russian ice cream with wafers, but made with homemade waffles. I really like doing waffles, it is a quick substitute for a cake, and I make these vanilla ones really often, so the recipe is quite tested. This ice cream is also made at our home really often, so why not to combine them. You don´t need an ice cream maker, eggs nor condensed milk to make it. This ice cream is so simple to make and I think it is even cheaper than the one from stores. Moreover, if you make it at home, you know exactly that you put only fine ingredients in it, no substitutes. And now, sit in a shade with Waffle Ice Cream Sandwich and relax.
- Waffles:
- 3 eggs
- 125 g melted butter
- 100 g crystal sugar
- 1 packet of vanilla sugar (or 1 tbsp vanilla extract)
- 250 g all purpose flour
- ½ tsp baking powder
- 250 ml milk
- Ice cream:
- 400 g fresh raspberries
- 500 ml heavy whipping cream
- 300 ml milk
- 200 g icing sugar
- + chocolate for decoration

Waffles:

Mix eggs with sugar and butter.

Add vanilla sugar, flour mixed with baking powder, and milk. Mix it well.

Pour about 3 and half tablespoon of batter in a waffle maker, spread it over the whole area, close waffle maker and bake until golden brown.

Repeat these steps until there is no batter left.

Let waffles cool.

Ice cream:

Whip whipping cream.

Smash raspberries thoroughly and incorporate them into milk mixed with sugar.

Pour mixture into whipped cream, stir well.

Pour the whole mixture into sealable food storage and put it in a freezer. Sir it every hour within first five hours in order to minimize ice crystals. Do not stir it after those 5 hours, let it in a freezer for 24 hours.

Assemble:

Take ice cream from a freezer and let it set at room temperature for about 20 minutes so it will be easier to scoop it.

Put a few scoops of ice cream (the more scoops, the bigger sandwicon a waffle, level it with a knife in order to create an even layer of ice cream and put second waffle on ice cream. Repeat this step until there are no waffles left.

Put waffle sandwiches in a freezer for a couple hours.

Sandwiches can be decorated with melted dark chocolate before serving. If you use melted chocolate, put sandwiches in a freezer again for a couple minutes so chocolate gets firm.

Cut waffles through and serve.
