Second Easter recipe is Easter garden cake. You can basically make this kind of cake from any cake, the most important part is the top of cake consisting of dark crushed biscuits, dirt, and icing resembling to grass. My version has brownie batter and pistachio pudding icing. This cake, from visual as well as flavor side, is perfect for the beginning of spring. No doubts kids as well as adults will love it.

Ingredients
- Brownie cake:
- 150 g dark chocolate
- 125 g butter
- 150 g sugar
- A pinch of salt
- 2 whole eggs
- 70 g all purpose flour
- 20 g Dutch processed cocoa
- Icing:
- 2 pistachio puddings (2x40 g)
- 500 ml milk
- 75 g butter at room temperature
- 7 tbsp icing sugar
- 250 g mascarpone
- Decorations:
- 10 Oreo cookies
- 200 ml whipping cream
- ½ package of stabilizer for whipping cream (optional)
- Green food coloring (3x tip of knife)
- Chocolate Easter eggs and decorations
Instructions

Melt chocolate, butter and sugar in water bath. Put it aside. Incorporate in the mixture whole eggs one at the time, flour, cocoa and a pinch of salt. Mix it and pour it into pan.

Bake on 180 degrees for about 25 minutes. Be careful not to overbake. Let it cool after taking from the oven.

In a pot, cook puddings from milk and puding mix. Let it chill in the pot covered with plastic wrap.

After chilled, incorporate butter and sugar using a mixer. Then, using a spatula, incorporate mascarpone. Spread the puding mixture over the top of chilled brownie cake.

Crush oreo cookies and sprinkle them over pudding icing.

Whip whipping cream together with stabilizer for whipping cream (or withouusing a mixer. Incorporate green food coloring into whipped cream. Put icing into piping bag with star nozzle and create stars, looking like clumps of grass, around circumference of the top of cake.

Finish decorating cake with chocolate eggs and decorations.
