Carrot cakes. They´re popular for a few years by now, but they got in my kitchen just now. Since I think carrot is a part of spring, I chose this Carrot Cake with Mascarpone Frosting as the first this year´s blog Easter recipe. Easter is around the corner, one won´t even notice. This carrot cake is enough even for incoming visitors since it is baked in a quite large baking pan. Thanks to 500 g of carrot, the cake is really juicy, almost like a brownie. Since there is also ginger, cinnamon, walnuts and lemon juice, you will not taste just carrot so even carrot haters will eat it. For example my boyfriend, who doesn´t like carrot, ate it and didn´t want to believe me that there really was carrot. As I said, they won´t notice it. Add mascarpone and whipped cream frosting and you will get a truly delicious spring dessert.
- 460 g butter at room temperature
- 460 g brown sugar
- 6 eggs
- 2 tsp vanilla extract
- Juice from 1 ½ lemon
- 2 tsp grated ginger
- 340 g all purpose flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 200 g ground walnuts
- 500 g grated carrot
- A pinch of salt
- Frosting:
- 500 g mascarpone
- 400 ml whipped cream
- 2 tsp vanilla extract
- 5 tbsp icing sugar

Beat butter with sugar until fluffy. Add egg yolks, vanilla extract, lemon juice and grated ginger. Beat again.

In the second bowl, toss together flour, baking powder and cinnamon. Incorporate flour mixture into butter mixture. Mix it.

Add walnuts and carrot.

In the third bowl, beat eggs whites and a pinch of salt until really thick. Incorporate egg white mixture into cake mixture using a spatula.

Pour batter in a baking pan and bake about 50 minutes on 180 degrees.

Apply frosting on the cooled cake.

Mix mascarpone with whipped cream, vanilla extract and icing sugar.

Apply frosting on the cake.

It can be topped with walnuts.

Díky za výborný recept, těsto je díky mrkvi krásně šťavnaté. Dělal jsem ho manželce k narozeninám minulý rok a vyžádala si ho i letos, takže očividně chutná oběma. Jediné co měním je, že uberu cukr do těsta, a že krém ochutím/osladím jen medem, přijde mi, že se pak dobře doplňuje s korpusem.
Veľmi sa teším, že recept chutí obom. Super nápad s medom, uznávam, že každý je zvyknutý na iné množstvo cukru 🙂
