I thought that I wouldn´t do anything with apples this year anymore, but when I see all these fallen apples in my garden I feel sorry not to use them. When I checked my last year recipes, I made apple recipes even in October and now, in the middle of September, it seems late. I don´t know whether I started early or the nature did 😀 Since Monday, there is a school waiting for me, so there will be more of “bag desserts”, cookies and similar, easily portable, stuff. I used my last days at home and made Apple Oat Cheesecake in Jars. Of course, they can be portable, if you have jar caps, which I don´t. These jars cause me nostalgia, because when I was little, we used to make exactly the same filling – cream cheese, sour cream and vanilla sugars, plus some fruits. I made it in a bit fall and healthier mode, with caramelized apples and old-fashioned oats, in jars. Jars don´t contain any crystal or icing sugar, the only sweetener is honey and vanilla sugars. If you can´t find any vanilla sugars in your neighborhood, there are plenty of online recipes how to make them or you can buy them online. Thanks to oats, honey and cream cheese, I consider these jars to be a relatively healthy dessert. If you grew up eating the already mentioned filling, give these jars a shot, a great fresh taste and nostalgia are guaranteed. Or even if you didn´t have a chance to taste it, it is worth a shot.
- 4 big apples (700 g)
- 25 g butter
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 100 g old-fashioned oats
- 3 tbsp honey
- 250 g cream cheese
- 220 g sour cream
- 2 vanilla sugars

Peel apples and cut them into cubes.

Melt butter on a medium heat.

Add chopped apples and cinnamon to butter.

Let apples stew for 20 minutes while stirring occasionally.

Set them aside, add vanilla extract and let them cool.

In the second bowl, mix together oats and honey.

In the next bowl, mix together cream cheese, sour cream and vanilla sugars.

Put oats and honey mixture to the bottom of cups, push it down to the bottom, put about 3 tsp of cream cheese mixture over oats, then put about 2 tsp of cooled apple mixture and, finally, about 1 tsp of cream cheese mixture, or more if there is more left, over apple mixture.

They can be topped with apples. Serve them cooled.
