I don´t celebrate Halloween nor do I get particularly excited by it, but when I saw the picture of the cookies similar to those of mine on Pinterest, I told myself that they´re soo cute and that I need to make them. So here are Apple Cinnamon Halloween Mummy Cookies. They are made of linzer dough with a hint of cinnamon and grated apples with cinnamon. Thanks to stripes placed carelessly on the top and eyes, the cookie looks like a mummy. I personally think that if you add eyes to basically anything, it immediately looks super cute. Since I didn´t find any chocolate eyes in shops, you probably need to make them at home as well, but don´t worry, it´s easy-peasy. You can vary the filling according your taste as well, but what is more autumn than cinnamon and apples. The taste of cinnamon linzer dough and apples is a great combination so you get tasty and visually appealing cookies. This way, you can prepare little Halloween at home even though you may not celebrate it 😉
- Dough:
- 360 g all purpose flour
- 50 g almond flour
- 115 g icing sugar
- 250 g butter
- 2 egg yolks
- 1/3 tsp salt
- 2 tsp cinnamon
- Filling:
- 6 big grated apples without their juice (about 500 g)
- 2 tsp cinnamon
- Crystal sugar
- Decoration:
- Cinnamon
- Brown sugar
- White and dark chocolate

Mix flour with icing sugar, almond flour, butter, egg yolks, salt and cinnamon. Process ingredients to create dough. Put it a refrigerator for an hour.

After an hour, roll the dough out on a floured work surface and cut off rectangles with the size of 15x8-10 cm.

Filling:

Peel apples and grate them on middle-sized grater. Squeeze the excessive juice from them. Mix them with sugar and cinnamon.

Put 1 - 2 tsp of apple filling on a cut off rectangle.

Cut off thin stripes from the excessive dough and put them carelessly from left to right on apple filling.

Sprinkle the rectangle with cinnamon and brown sugar and put them in the oven on 180 degrees for 10 – 15 minutes.

Let them cool and put a pair of eyes on the top part.

Eyes:

Melt dark chocolate in water bath and put it in a piping bag. Make a small hole on the end of piping bag. Using the piping bag, create small dots on baking paper. Let them dry and get firm.

Melt white chocolate in water bath and put it in a piping bag. Make a small hole on the end of piping bag. Using the piping bag, create big dots on baking paper. Press down dark dots into white ones before the white ones get firm. Let them dry and get firm. We have eyes.
Make eyes ahead, they need to get firm.
