Another recipe from “in the purse” category are those Homemade Lotus Biscoff Shortbread Cookies. I assume that you have heard about those cookies. They are known thanks to their caramel spicy taste and they are served with a coffee. This is their homemade version. Some recipes for them require caramel, but I think that it is useless and more work than needed. Yes, you will get a little bit lighter cookies than the original ones, but I think it is not a problem at all. The second necessity is spices. If you think of any cake spices , it is highly probable that you will need it in this recipe. Even black pepper. And yes, black pepper is needed. Also, these are stamped cookies so you don´t have to call them Lotus cookies, but only stamped cookies. Thanks to all spices, their taste and scent is similar the Christmas ones so they are also perfect for Christmas. Since these cookies should be served with a coffee, they are a bit tough, but it is nothing that cannot be fixed with a piece of bread and cookies in an airtight box overnight.
- 230 g butter
- 330 g brown sugar
- 130 g white sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 5 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cloves
- 1 tsp dried ginger
- 3/4 tsp black pepper
- 3 tsp vanilla extract
- 2 eggs
- 470 g all purpose flour

Beat butter with sugars until fluffy. Add baking soda, salt, nutmeg, cloves, gingerbread, black pepper. Beat again.

Add vanilla extract, eggs and beat again.

Add flour and form dough.

Roll out dough on floured surface and cut out shortbreads. If you can to get stamped shortbreads, put a stamp in flour and press it down to dough.

Put shortbreads on baking pan covered with baking paper. Put baking pan in a refrigerator for about 30 minutes. After 30 minutes, take it out and bake it on 180 degrees for about 10 minutes.
