I did this recipe one week ago, when the season of cherries was on. Now, there isn´t much of them, so this recipe will probably be more useful next year, but never mind. I´m known to love cakes with chocolate or chocolate plus something extra. These chocolate muffins with cherries are very good for summer, because you don´t have to be afraid that they ´ll go off in 2 days. Actually, that´s an advantage of all muffins, I guess that´s one of the reasons why I really like to bake them. And if you don´t know what to do with extra cherries, I have an idea.
Recipe (12 muffins)
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
1/3 cup cocoa
115 g butter
2 eggs
2 tsp kirsch
1 tsp vanilla extract
1 cup milk
1/3 cup chocolate
1 1/3 pitted cherries
Directions:
1. In a bowl, mix together flour, baking powder, salt and cocoa.
2. In the second bowl, using a mixer, cream together butter and sugar. Add the eggs one at time, kirsch and vanilla extract. Beat together.
3. Using a spatula add the half of the flour mixture to the batter, milk and the second half of the flour mixture. Mix and add chopped chocolate and cherries.
4. Let the batter rest for 10 minutes and then fill muffin cups with the batter. They can be sprinkled with extra chopped chocolate or cherries. Bake for about 25 minutes to 190 degrees.
Dosť dobrý recept, muffiny sú jemné a vláčne. Ale mne vyšlo 25 muffinov z toho množstva 🙂 ak by náhodou chcel niekto robiť dvojitú dávku
