I still don´t have strawberries in my garden, but they were on sale in supermarkets so I bought a few boxes, specifically a kilo and half. But surprise, surprise – they even didn´t last four days, so I had to throw away most of them because they went mouldy. Well, what a quality. I planned to make a cake, where strawberries would be put vertically on brownies and they would look really good in cut. However, vertical strawberries had to be enough only around the edges of a baking pan and I put bigger pieces of chopped strawberries in the middle. Strawberries were then covered with chocolate ganache. This way, Brownie Strawberry Chocolate Bars were made. They are perfect for those moments when you´re craving chocolate, since you will find rich chocolate taste in brownies and in ganache. Fresh strawberries are a great combination with chocolate – of course, strawberries and chocolate match each other since the beginning of times. If you have lots of strawberries, make sure you put them vertically for better effect. However, strawberries chopped like that don´t look bad either and the cake tastes very good one way or another. By the way, I have my first state exam tomorrow, exam period lasts for almost a month, so wish me luck 🙂

- 150 g dark chocolate
- 125 g butter
- 150 g sugar
- A pinch of salt
- 2 whole eggs
- 70 g all purpose flour
- 20 g Dutch processed cocoa
- 600 g fresh strawberries
- Chocolate ganache:
- 400 ml heavy cream
- 400 g dark chocolate

Brownie:

Melt chocolate, butter and sugar in water bath. Put it aside. Incorporate whole eggs, one at the time, flour, cocoa and a pinch of salt in the mixture. Mix it and pour it into pan.

Bake at 180 degrees for 20 – 25 minutes. Be careful not to overbake. Let it cool.

Cut strawberries into halves and put them vertically around the circumference of a baking pan. Put strawberries cut into bigger pieces on the remaining part of the top of brownie, or you can put whole strawberries without cutting – but you will need more strawberries, which are smaller.

Ganache:

Heat whipping cream and bring it to boil.

When it starts to boil set it aside and add chopped chocolate.

Stir well, until you get a consistent mass.

Let it cool a bit, to a room temperature.

Pour it over strawberries and put it in a refrigerator overnight.
- If you have more strawberries, you don´t have to cut them, just put them vertically on the brownie, it will look even better – make sure you use more ganache so they are completely covered
