Unfortunately, I don´t have blueberries in my garden, so I´m really happy if I find them at good price. Last time I got lucky, so I made these blueberry muffins. They´re actually my first muffins without chocolate, isn´t it horrible?
Recipe (12 muffins)
½ cup butter at room temperature
1 ¼ cup sugar
2 eggs
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
1 tsp vanilla extract
½ cup milk
2 cups fresh blueberries
Directions:
1. Beat butter and sugar together using a mixer. Gradually add eggs and vanilla extract. Mix everything together.
2. In the second bowl, mix flour, baking powder and salt together.
3. Using a spatula add flour mixture and milk to the butter and sugar mixture.
4. Fold carefully blueberries to the batter.
5. Let the batter rest in a fridge for at least 30 minutes.
6. After half an hour, fill the muffin cups with the batter. Sprinkle the batter with a bit of sugar. Bake on 200 degrees for 12 minutes, then lower the temperature to 180 degrees and bake to golden brown for another about 15 minutes. Do not open the oven during at least last 5 minutes of baking.
