Upside Down Apple Poppy Seed Cake Bars

It got cold, I don´t even know when, but you can still find a few apples in your garden. And you can make this traditional Slovak Upside Down Apple Poppy Seed Cake Bars with them. Who wouldn´t recognize it, I think it is a must-have in Slovak homes. In my place, when I was little and we had lots of apples, it always was whether an apple cake bars with kneaded dough or this upside down one. I guess everyone in Slovakia has its own tried and tested recipe, so I told myself that I would share mine, or rather our family´s. I added some poppy seed, which I usually don´t do, but it has been a while since I wanted to make an apple poppy seed combination. Of course, this combination is very tasty and it is a great match to this upside down cake. Tried and tested soft pound cake batter, grated apples which don´t need to be stewed, cinnamon, poppy seed and chocolate, and a traditional Slovak fall cake is here.

Traditional Slovak Upside Down Apple Cake with chocolate and a bit of poppy seed
Servings: 30 bars
Ingredients
  • Filling:
  • 1 kg apples
  • 2 tsp cinnamon
  • 3 tsp rum
  • 60 g crystal sugar
  • Cake:
  • 6 eggs
  • 360 g crystal sugar
  • 14 tbsp warm water
  • 100 ml oil
  • 1 tsp vanilla extract
  • 360 g all purpose flour
  • 1 packet of baking powder (12 g)
  • A pinch of salt
  • 130 g poppy seed
  • Chocolate:
  • 200 g dark chocolate
  • 2 tsp oil
Instructions
  1. Peel apples and grate them into thin slices.
  2. Put grated apples in a baking pan covered with baking paper.
  3. Sprinkle apples with cinnamon, rum and crystal sugar.
  4. Cake:
  5. Separate egg whites from egg yolks.
  6. Beat egg yolks with sugar using a mixer.
  7. The mixer is still on, when gradually add tablespoons of water and later, also gradually, oil. Add vanilla extract.
  8. In the next bowl, using the mixer, beat egg whites with a pinch of salt until fluffy and until
  9. not liquid anymore.
  10. Gradually and alternatively fold flour mixed with baking powder and whipped egg whites into
  11. the egg yolk mixture.
  12. Divide batter into two halves and add poppy seed in one half, stir well.
  13. Pour poppy seed batter over apples.
  14. Pour regular batter over the poppy seed one, spread it over.
  15. Bake on 180 degrees for 25 – 30 minutes or until a toothpick inserted will come out clean. It is important not to open an oven during first 20 minutes.
  16. Leave it to cool, then turn the cake upside down.
  17. Remove baking paper and pour chocolate over the cake.
  18. Melt chocolate in a water bath with oil. Pour it over apples.
