Chocolate Cherry Truffles

My cherries were not ripe yet during this week so I was thinking about a cake which didn´t require a lot of cherries. Eventually, I made Chocolate Cherry Truffles. Just to make it clear, truffles, or truffle balls, have recently become popular and you can find them in stores. But why should you buy them since they are so simple to make. They are made with chocolate, heavy cream and I also added butter in order to make them fluffier. The more quality ingredients you use, the better truffles taste. Since I wanted to add fresh cherries, in order to highlight the cherry taste, I also added cherry liqueur, kirsch, not only into mixture, but cherries are soaked with it as well. Thanks to this liqueur, truffles are a bit alcoholic, but really only a little bit. But you can replace liqueur with juice, if you want to make them non-alcoholic. Strong chocolate taste and fresh cherries with liqueur are definitely a hit. These truffles just taste like as if they were bought.

Chocolate Cherry Truffles

No-bake chocolate truffle balls with a fresh cherry inside
Servings: 21 truffles
Ingredients
  • 120 ml heavy cream
  • 30 g butter
  • 230 g dark chocolate
  • 3 tbsp cherry liqueur (kirsch)
  • 21 fresh cherries (washed and pitted)
  • 3 tbsp cherry liqueur
  • Cocoa
Instructions
  1. In a pan, combine heavy cream and butter and put it over low, up to medium, heat.
  2. When it starts to boil, set it aside and incorporate chocolate.
  3. Stir well until chocolate is completely melted, then add cherry liqueur.
  4. Let it cool a bit and put it in a refrigerator for two up to three hours.
  5. Meanwhile, combine cherries and 3 tablespoons of cherry liqueur. Let them soak for 2 up to 3 hours while stirring occasionally.
  6. Take the mixture from the refrigerator, take small parts from it, flatten it and place a cherry in the middle. Form a ball.
  7. Put truffles on a parchment paper and put them in the refrigerator again, for about 30 minutes.
  8. Take them out from the refrigerator and roll every truffle in cocoa powder. (I tried to cover them with chocolate, but ganache mixture starts to melt down so use cocoa, definitely not chocolate.)
  9. Let them get firm.
Recipe Notes
  • You can use cherry juice instead of cherry liqueur
  • Cherries can be soaked longer, even overnight
