Upside down pear chai spiced cake

Season when strawberries and raspberries are changed by apples and pears begins. Since pears are more ripe than apples here (probably no apples this year), I used them as first ones and Upside down pear chai spiced cake was on the table. In our small home, it was eaten in less than 2 days, although I admit, I was the biggest eater :D.

If you haven´t heard about chai spice, it is basically a kind of tea and you can find it in a supermarket in a box in tea section, it is not difficult to find it at all. Its biggest use is in coffee, it is added into chai coffee latte, if you haven´t tasted it, you can regret. Personally, its scent reminds me of fall or Christmas so it creates great combination with fall fruit. I used two chai tea bags in this cake, which is the right amount for a cake baking pan. Together with other spices in recipe, it creates an interesting delicious taste which resembles to ginger bread. But it is not ginger bread. You can adapt the amount of sugar according to sweetness of pears, mine weren´t sweet so I used more sugar. Moreover pears are placed on caramel-like, it gives them sweet, caramel butter flavor.

Fall upside down cake with caramelized pears and chai spiced batter
Servings: 8 - 12 pieces
Ingredients
  • Caramel:
  • 60 g butter
  • 6 tbsp cane sugar
  • A pinch of salt
  • 1 tsp vanilla extract
  • 2 pears
  • Batter:
  • 75 ml water
  • 2 chai tea bags
  • 115 g butter
  • 3 eggs
  • A pinch of salt
  • 90 g sugar
  • 1 tsp vanilla extract
  • 1/3 tsp fresh grated ginger
  • 175 g all purpose flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
Instructions
  1. Caramel: Heat and melt butter in a pan. Add sugar and stir vigorously until they form one mixture. Add salt. Put it aside and add vanilla extract. Stir and pour caramel immediately into round baking pan covered with baking paper. Spread caramel using a spoon in order to get it all over the bottom of pan.
  2. Peel pears and cut them vertically into slices. Put them on caramel to form a fan.
  3. Batter: Boil water and pour it on a glass with chai bags. Let them brew and later discard tea bags.
  4. Beat butter and eggs yolks until fluffy. Add sugar, vanilla extract, ginger and chai tea water. Beat again.
  5. In the second bowl beat egg whites with a pinch of salt until fluffy and until they are not liquid.
  6. In the next bowl, mix flour with baking powder, cinnamon and nutmeg.
  7. Gradually incorporate flour mixture, eggs whites and again flour mixture and egg whites into sugar mixture. Pour batter on pears and bake for 30 – 35 minutes on 180 degrees.
  8. Let it cool after taking out from oven and then turn it upside down.
