Mint brownie cheesecake

As promised, here is another recipe with cream cheese or mascarpone. Personally, I really like a combination of mint and chocolate, but very often, when I gave someone a green cake, the person was wondered, sometimes even horrified. Well, every man to his taste. The taste of sweet brownie should be balanced with something, the ideal is cream cheese, so the combination of brownie cheesecake. Plus, my experiment with mint, well mint syrup and extract.

Recipe (baking pan – 33, 5 cm)

For brownie:
150 g dark unsweetened chocolate
125 g butter
150 g sugar
A pinch of salt
2 whole eggs
70 g all-purpose flour
20 g Dutch processed cocoa

For frosting-cheesecake:
400 g cream cheese (or mascarpone)
8 tbsp mint syrup
10 tsp mint extract (or according to taste)
2x tip of a knife of green food coloring
1 egg

Directions:
1. Melt chocolate, butter and sugar in water bath. Put it aside. Incorporate in the mixture whole eggs one at the time, flour, cocoa and a pinch of salt. Mix it and pour it into pan.
2. You can prepare frosting meanwhile chocolate is melting. Mix cream cheese with mint syrup and mint extract. Add food coloring and egg. Mix it and pour it on brownie batter. If you want to, you can create a swirl effect using a knife.
3. Bake on 180 degrees for 30 – 35 minutes. Cover the cake with parchment paper during last few minutes of baking. Bake until the center is still a bit shaky. Be careful not to overbake. Let it cool after taking from the oven.

      Ďakujem, budem rada, keď dáš vedieť, ako sa vydarili 🙂 Sirup a extrakt sú domáce, čo ťa asi v tomto ročnom období nepoteší, no v lete ich určite skús. Recept na mätový sirup je tu: https://blondieishatkitchen.com/sk_SK/matovy-sirup/ a extrakt je iba asi hrsť mäty naložená v alkohole (vodke), mätu trochu popučiť, aby dala šťavu a ja som to robila v pomere hrsť mäty s vodkou do skla od tatárskej omáčky 🙂
