Apple walnut bread

So I´m back in school again. I realized that I have a need to eat something sweet every day. I´m starting to think that I´m addicted to sweets. Please, tell me I´m not the only one. Since I´m in school and creamy cakes are not really good in a purse, I mostly bake drier sweets, suitable also for school. After all, we all need to recharge energy quickly. But the word “dry” and this Apple Walnut Bread can´t be used together. This bread is super moist and super tasty. Thanks to buttermilk, my favorite ingredient, the bread is great. At my place, it is eaten with a rocket speed, I guess I will have to make another one very soon. You can even have it for breakfast. I don´t have many apples so the advantage is that you will need only two of them. In combination with walnuts and cinnamon you will get the right, super tasty fall dessert, which everyone in your family will love.

Simple moist fall bread with apples, walnuts and cinnamon
Servings: 15 pieces
Ingredients
  • 115 g butter
  • 220 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 390 g all purpose flour
  • 2 ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • 300 g buttermilk
  • 2 big apples
  • 100 g walnuts
Instructions
  1. Beat butter with sugar until fluffy using a mixer. Add eggs, vanilla extract and beat again.
  2. In the next bowl, combine flour with baking soda, baking powder, salt, cinnamon and nutmeg.
  3. Add flour mixture into butter mixture and stir. Add buttermilk and stir again.
  4. Peel apples and cut them into medium-sized cubes. Incorporate them into batter.
  5. Cut walnuts into medium-sized pieces and incorporate them into batter as well.
  6. Stir well and pour batter into greased baking pan. Batter can be topped with walnuts and apples.
  7. Bake for about 70 minutes on 180 degrees or until the toothpick inserted will not come out clean. After 30 minutes in the oven, cover batter with baking paper and let it finish baking.

    My loaf pan was too small, bread overflowed pan! What size should you use.

      As mentionned in notes, baking pan is 30 cm long. It is bigger than classic loaf baking pans so I guess it is the reason why batter overflowed. Hopefully, it still tasted good
