You ´re probably enjoying a peaceful atmosphere with lots of cakes so here comes a recipe for something savory. I don´t even remember when was the last time I added some non-cakey recipe on the blog. Are you expecting visitors and need something quick and untraditional? These Rainbow Veggie Tortilla Pin Wheels are the thing you must do. It happens every often, and I hope I´m not the only one, that I have a few pieces of leftover tortillas. There is no point in making meat for just 3 pieces so I usually don´t know what to do with them. Therefore, I created tortilla pin wheels, or rolls, where you can use three small tortillas. Another advantage is that they really are not time-consuming, you can make them just in a few minutes and don´t have to turn on neither an oven nor a cooker. All you need to do is to stir everything together, apply it on a tortilla, cut and roll it. These tortillas are even vegetarian, you will only need two kinds of cheese and three peppers in different colors. They´re really simple, quick and will definitely catch anyone´s attention.

Simple cheese and vegetable pin wheels where you can use up the leftover tortillas
Servings: 3 tortillas
Ingredients
  • 200 g cream cheese
  • 100 g spread cheese
  • ½ tsp herbes de Provence
  • A pinch of salt
  • 2 small garlic cloves
  • 3 small tortillas
  • Peppers in different colors
Instructions
  1. Stir well cream cheese and spread cheese.
  2. Add herbes de Provence and salt. Stir again.
  3. Peel and smash garlic. Add it to the mixture, stir well.
  4. Spread the mixture over tortillas.
  5. Cut peppers into slices and put these slices on the mixture. Place them in the direction of rolling so there will be no problem with tortilla rolling.
  6. Roll up tortilla and cut it into pieces.

    What is spread cheese?

      It is a sort of cream cheese, only more spreadable and with bolder salty and smoked taste. We have it in Slovakia under the name “Bambino” or similar to this. Here you can find its ingredients and I hope you can find something similar in your area 🙂
