Blueberry Cream Cheese Tart

Have you already eaten all Christmas cookies? I almost have so I need a new cake. With the arrival of new year, many people make their resolutions to live healthier. I´m not one of them, but this Blueberry Cream Cheese Tart could be considered as a half-healthy dessert since it uses cream cheese. It is composed of kneaded dough and creamy filling. One of the best things about it is that its preparation doesn´t take forever, in order to get filling, you basically just mix almost everything together. Since it´s already January and summer is nowhere to be found, I´m starting to have a summer fruit deficit so I must use my summer stocks, whereas frozen or compote. In this tart, I used compote blueberries from summer, just without their juice. Soft cream cheese, sour cream and blueberries are the right combination when you want to remind yourselves of summer, use up summer fruit stocks and not to spend lots of time in kitchen.

Creamy tart with blueberries, cream cheese and sour cream filling
Servings: 8 - 12 pieces
Ingredients
  • Dough:
  • 250 g all-purpose flour
  • 125 g butter
  • 75 g icing sugar
  • 1 egg
  • A pinch of salt
  • 30 ml cold water
  • Filling:
  • 500 g cream cheese
  • 200 g sour cream
  • 8 tbsp icing sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 200 g blueberries (fresh, frozen or compote)
Instructions
  1. Dough:
  2. Mix and combine flour with butter, icing sugar, egg, water and salt. Process it using hands or mixer. Put the dough in a refrigerator for an hour.
  3. Take the dough out after an hour, roll it out on a floured work surface and put it on the greased baking tart pan. Cut off the remaining dough around the edge of the baking pan. Cover the dough with baking paper and weigh it down with, for example, legume.
  4. Bake 15 - 20 minutes on 180 degrees or until edges begin to brown. Take it out from the oven, remove the baking paper and legume and leave it cool.
  5. Filling:
  6. Mix cream cheese with sour cream, sugar and vanilla extract.
  7. Add egg and mix again.
  8. Gently fold in blueberries.
  9. Pour filling on the baked dough and bake again for about 45 minutes on 170 degrees.
  10. Let it cool, preferably overnight.
