Brownie Chocolate Cake with Chocolate Mascarpone Filling and Berry Fruits

Such a long title, but such a simple cake. You may have noticed that I´m not into making cakes. All this decoration, smoothing, uff. I would rather make 5 tarts than 1 round layered cake. However, I dealt with this my way and made a cake where you don´t have to smooth or even out anything. Not because of some anniversary, but because I was in mood for something special. This Brownie Chocolate Cake with Chocolate Mascarpone Filling and Berry Fruits is a dream dessert for all chocoholics. It is made from 2 brownie layers, literally brownie, not just cocoa sponge cake that pretends to be a brownie. Then, let´s add chocolate mascarpone filling, well more like cocoa filling, but you wouldn´t notice it in its taste and finally, as a cherry on top, fruits. I used the frozen ones, à la what I found in a freezer since I´m getting rid of summer fruit stocks, but you can use frozen or fresh fruits as well. However, if you use the frozen ones, make sure that you let drip off any excessive juice from fruits, otherwise the cake will be mushy. This cake won´t take as much time as the traditional one and it will satisfy chocoholics as well as fruit lovers.

Simple cake made from brownie cakes, chocolate mascarpone filling and berries
Servings: 8 - 12 pieces
Ingredients
  • Brownie layer 1:
  • 100 g dark chocolate
  • 85 g butter
  • 100 g sugar
  • 2 eggs
  • 70 g all purpose flour
  • 1/3 tsp baking powder
  • ¼ tsp salt
  • 2 ½ tbsp cocoa
  • 20 ml milk
  • Brownie layer 2:
  • 100 g dark chocolate
  • 85 g butter
  • 100 g sugar
  • 2 eggs
  • 70 g all purpose flour
  • 1/3 tsp baking powder
  • ¼ tsp salt
  • 2 ½ tbsp cocoa
  • 20 ml milk
  • Filling:
  • 250 ml whipping cream
  • 120 g icing sugar
  • 30 g cocoa
  • 250 g mascarpone
  • Fresh or frozen berry fruits (strawberries, raspberries, blueberries,...)
Instructions
  1. Brownie cake:
  2. Melt chocolate, butter and sugar in water bath. Put it aside. Incorporate in the mixture whole eggs one at the time and flour mixed with baking powder, cocoa and salt. Add milk and stir well.
  3. Pour batter in the baking pan covered with baking paper and put it on the oven.
  4. Bake for 20 minutes on 180 degrees. Let it cool.
  5. Repeat these steps one more time in order to make second brownie cake layer.
  6. Cut off the edges of brownies a bit since edges are too low.
  7. Apply filling on brownie layers.
  8. Filling:
  9. Whip whipping cream.
  10. Add icing sugar and cocoa, beat.
  11. Add mascarpone and beat shortly again. Be careful not to overmix filling.
  12. Put filling in a piping bag with a decorative piping nozzle and decorate first brownie layer with filling.
  13. Put berry fruits on filling.
  14. Put second brownie layer on fruits and repeat these steps, put filling on brownie and berry fruits on filling again.
  15. Put the cake in a refrigerator for a couple hours.
